In the vineyard: The Shiraz vines are planted on a south facing slope in the Walker Bay basin with an east to west row direction. The vineyards are irrigated with drip irrigation.
About the harvest: The picking of the grapes were done when the grapes were at a ripe 24.3° Balling. Grapes were harvested in the earlier part of the morning to preserve freshness and fruit by the time they reached the cellar.
In the cellar: Great care is taken in the cellar to optimise extraction of flavours during fermentation. The grapes were de-stemmed and crushed. Fermentation temperature was maintained at around 28 degree Celsius. After fermentation, the wine went through Malolactic fermentation in Stainless Steel tanks. After Malo, the wine was transferred to barrel and spent a total of 19 months in barrel.
Ageing: This wine is made to drink now, but will keep and evolve in bottle over the next 10 years. Careful cellaring conditions needs to be maintained during the cellaring of this age worthy wine.
