This 100% Sauvignon Blanc, our flagship white wine, was fermented on the Sauvignon Blanc skins in a single 500 liter barrel. The wine remained on the skins for a total of 9 months, from fermentation and through barrel maturation. The wine shows, fresh black current and tropical fruit notes with and a touch of honey. All balanced by fresh natural acidity, finished with fine wood tannins. Produced as a natural wine, fermentation took place as a natural ferment, with wild yeast being introduced from the grape skins. Once removed from barrel after maturation, the wine was bottled without any fining processes, a truly natural wine.
