In the vineyard: The Sauvignon Blanc vines are planted on a South facing slope in the Walker Bay basin with an east to west row direction. The vineyards are irrigated with drip irrigation.

About the harvest: The picking of the grapes were done when the grapes were at a ripe 22.3° Balling. Grapes were harvested in the earlier part of the morning to preserve freshness and fruit by the time they reached the cellar.

In the cellar: Great care is taken in the cellar to optimise extraction of flavours during fermentation. The juice is left on the skins in the press for 2 hours before pressing starts. Fermentation temperature was maintained at around 14 degree Celsius.

Ageing: This wine is made to drink now, but will keep and evolve in bottle over the next 5 years. Careful cellaring conditions needs to be maintained during the cellaring of this age worthy wine.

Awards: Still to be rated
